- 500g white bread flour
- 1 tsp dried yeast
- 1 tsp caster sugar
- 1 ½ tbsp olive oil
- 100ml passata
- Handful of fresh basil, chopped
- 1 garlic clove, crushed
- 200g vegan mozzarella cheese, grated
- 2 tomatoes, sliced
Put the flour, yeast and sugar into a large bowl. Mix together 150ml of cold water and 150 ml of boiling water. Add the oil and 1 tsp salt to the water and pour over the flour.
Stir well with a spoon then start to knead the mixture in the bowl until it is soft and slightly sticky.
Dust some flour on a work surface and knead the dough for 10 mins. Put it back in the bowl, cover with a clean cloth and leave to rise in a warm place for 1 hour or until doubled in size.
Divide the dough into 2 pieces and stretch into shape.
Spread the passata on top then add some sliced tomatoes and the vegan cheese.
